Black Sesame Brownies

Fudgy, chewy black sesame brownies made with black sesame powder blended into a rich paste, plus white chocolate to balance the roasted nuttiness of the black sesame. All the texture of a classic brownie, none of the cocoa — just deep, roasty, nutty flavor that isn’t too sweet.

Ingredients

  • 1 stick (113 grams) unsalted butter
  • 1 1/2 cups (185 grams) all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup (130 grams) brown sugar
  • 1/2 cup (100 grams) granulated sugar
  • 2 eggs, room temperature
  • 1/2 cup (115 grams) whole milk
  • 2/3 cup (100 grams) black sesame powder
  • 2/3 cup (100 grams) white chocolate

Instructions

  1. In a wide, shallow pan, brown the butter. Immediately after seeing brown flecks form, transfer the browned butter to a large mixing bowl. Let that cool for 30 minutes or refrigerate for 10 minutes.
  2. Line an 8×8 baking pan with parchment paper. Preheat the oven to 350°F.
  3. In a small bowl, combine the flour, baking powder and salt. Whisk to combine. Set aside.
  4. In the bowl with the cooled browned butter, add the brown sugar and granulated sugar. Mix with a silicone spatula. Add the eggs and mix again until combined.
  5. In a small saucepan, heat the milk until hot and almost simmering. In a small bowl, combine the black sesame powder and hot milk. Mix until it forms a smooth paste. Add about 2/3 of this black sesame paste to the butter/sugar/egg mixture. Fold it in with a silicone spatula until combined well. Set aside the remaining black sesame paste for the swirls later.
  6. Add the dry ingredients to the butter/sugar/egg mixture. Mix that in until just combined. Fold in the white chocolate chips. The batter will be thick.
  7. Pour the batter into the parchment lined pan. Spread the batter to even out the layer to the edges of the pan.
  8. With a small spoon, dollop the remaining black sesame paste on top the the batter, spacing the dollops evenly across the surface. With a chopstick or toothpick, swirl the dollops, making circular motions to create swirls. The color contrast between the sesame paste swirls and the batter will become more prominent after baking.
  9. Bake in the oven for 30 to 32 minutes. Cool in the pan for 5 minutes and then transfer the brownies to a cooling rack, lifting it out of the pan by the parchment liner, to continue cooling completely.
