Black Sesame Brownies with Black Sesame Swirls and White Chocolate Chips

Meet Your New Favorite Way to Break Up With Cocoa
Look, chocolate brownies are great. They’re the reliable best friend who always shows up. But sometimes you want the new friend who shows up with a jar of black sesame paste and completely rearranges your dessert priorities. That’s these Black Sesame Brownies — a fudgy, chewy square of roasted-nutty goodness that swaps cocoa for black sesame powder (mixed with milk into a rich paste) and folds in white chocolate for balance. The result? Deep, toasty, slightly sweet, and 100% not another basic brownie.
Why Black Sesame Deserves a Spot in Your Baking Rotation
Black sesame has this deep, roasted, almost smoky flavor that chocolate can only dream about. When you make it into a paste with milk, it turns silky and rich — basically nature’s fudge base. Combine that with white chocolate’s sweetness, and you get a brownie that’s rich, nutty, and just sweet enough without tipping into sugar coma territory.
The Fudgy Texture You’re Actually Here For
Nobody wants a cakey brownie pretending to be fudgy. These brownies bring the real deal: dense, chewy, melt-in-your-mouth texture thanks to butter, brown sugar, and just enough flour to hold everything together — not one crumb more.
A Simple Pantry-to-Payoff Ratio
Butter, sugar, eggs, milk, flour, black sesame powder, and white chocolate. That’s it. No fancy equipment, no 15-step process — just a genuinely unique brownie that tastes like it took way more effort than it did.
Perfect For Whenever You Want to Impress Without Trying Too Hard
Bake sale? Dinner party dessert? “I just felt like baking on a Tuesday” moment? These brownies fit every occasion because they look elegant, taste sophisticated, and somehow only require one bowl and zero pretension.

Ingredients
- 1 stick (113 grams) unsalted butter
- 1 1/2 cups (185 grams) all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup (130 grams) brown sugar
- 1/2 cup (100 grams) granulated sugar
- 2 eggs, room temperature
- 1/2 cup (115 grams) whole milk
- 2/3 cup (100 grams) black sesame powder
- 2/3 cup (100 grams) white chocolate
Instructions
- In a wide, shallow pan, brown the butter. Immediately after seeing brown flecks form, transfer the browned butter to a large mixing bowl. Let that cool for 30 minutes or refrigerate for 10 minutes.
- Line an 8×8 baking pan with parchment paper. Preheat the oven to 350°F.
- In a small bowl, combine the flour, baking powder and salt. Whisk to combine. Set aside.
- In the bowl with the cooled browned butter, add the brown sugar and granulated sugar. Mix with a silicone spatula. Add the eggs and mix again until combined.
- In a small saucepan, heat the milk until hot and almost simmering. In a small bowl, combine the black sesame powder and hot milk. Mix until it forms a smooth paste. Add about 2/3 of this black sesame paste to the butter/sugar/egg mixture. Fold it in with a silicone spatula until combined well. Set aside the remaining black sesame paste for the swirls later.
- Add the dry ingredients to the butter/sugar/egg mixture. Mix that in until just combined. Fold in the white chocolate chips. The batter will be thick.
- Pour the batter into the parchment lined pan. Spread the batter to even out the layer to the edges of the pan.
- With a small spoon, dollop the remaining black sesame paste on top the the batter, spacing the dollops evenly across the surface. With a chopstick or toothpick, swirl the dollops, making circular motions to create swirls. The color contrast between the sesame paste swirls and the batter will become more prominent after baking.
- Bake in the oven for 30 to 32 minutes. Cool in the pan for 5 minutes and then transfer the brownies to a cooling rack, lifting it out of the pan by the parchment liner, to continue cooling completely.

❓ FAQ’s for Chewy, Fudgy Black Sesame Brownies
Roasted, nutty, slightly earthy, with a subtle sweetness.
Yes! If you already have black sesame paste on hand, you can skip making your own paste from powder and milk — just make sure the consistency matches so your batter isn’t thrown off.
Not really — that’s the whole point! They get their richness from black sesame and white chocolate instead of cocoa, so expect a nutty, toasty flavor rather than classic chocolate.
Sesame powder can sometimes be stubborn. Whisking it thoroughly with hot milk (instead of cold) helps it dissolve into a smoother, more cooperative paste.
Asian grocery stores, Japanese and Korean markets, and online. Look for roasted (not raw) black sesame powder for the deepest flavor. If your powder tastes flat, toast it gently in a dry pan for 2–3 minutes and let it cool before using.
Because dry powder dumped straight into batter turns gritty and stubborn. Blooming it into a paste with milk hydrates the sesame, unlocks the roasted aroma, and distributes that dramatic color evenly. Sixty seconds of whisking, enormous payoff.
Absolutely. Toast whole black sesame seeds until fragrant, cool completely, then blitz in a spice grinder or high-powered blender until fine and sandy. Don’t over-blend unless you’re aiming for sesame butter — which is delicious, but a different recipe.
You can, but it will shift the flavor balance since white chocolate’s sweetness is what keeps this brownie from turning bitter or overly rich. If you swap, expect a more intense, less sweet brownie.
Store them in an airtight container at room temperature for up to 4 days, or refrigerate for up to a week — the fudgy texture holds up beautifully either way.
Pull them when a toothpick inserted near the center comes out with moist crumbs, not wet batter. The color won’t tell you much here (everything is already dark), so trust the toothpick and the slightly set, puffed edges.
Totally normal. Black sesame goes charcoal-gray once mixed with butter, sugar, and eggs. Higher-quality, well-roasted powder gives a darker result. Gray is the goal — lean into the aesthetic.
Absolutely. Wrap individual brownies tightly and freeze for up to 3 months. Thaw at room temperature (or microwave for a few seconds.)
Use a vegan butter block, oat or soy milk, and dairy-free white chocolate. For eggless, two flax eggs work, though the brownies will be slightly denser and less crackly on top.
Extra white chocolate chunks, a swirl of matcha batter, flaky sea salt on top, toasted whole sesame seeds for crunch, or a drizzle of condensed milk. A scoop of vanilla or matcha ice cream is never a bad idea.
