  • 1 egg, room temperature
  • 3 ripe bananas
  • 1/2 cup (135 grams) greek yogurt
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or maple syrup
  • 1 cup (185 grams) dark chocolate chips + 1/4 cup for sprinkling on top of the muffins

Instructions

  1. Preheat oven to 350°F on convection bake. Line a 12-cup muffin pan with muffin liners.
  2. In a medium mixing bowl, combine the dry ingredients: almond flour, whole wheat flour, protein powder, baking soda, baking powder, espresso powder and malted milk powder.
  3. In a large mixing bowl, add the egg, peeled bananas, yogurt, vanilla and honey. Using a masher, mash the bananas while mixing all the wet ingredients together.
  4. Add the flour mixture to the banana mixer. Fold it all together with a dilicone spatual until mixed together well. Add the chocolate chips and mix that until just evenly incorporated.
  5. Pour the muffin batter evenly into the lined muffin pan. The batter should reach close to the top of the muffin liner. Sprinkle with extra chocolate chips on top.
  6. Bake for 15 minutes. Insert a cake tester to make sure it comes out clean.
