Ingredients

  • 1 package (700 grams) of Mochi Sweet Rice Cake
  • 2 pounds strawberries, hulled and sliced
  • 1 pint blueberries

Whipped cream

  • 2 cups heavy whipping cream
  • 2 tablespoons dry milk powder
  • 3 tablespoons of powdered sugar
  • 1 teaspoon vanilla extract
 

Instructions

  1. Prepared the whipped cream by adding all the whipped cream ingredients to the bowl of your stand mixer: heavy cream, dry milk powder, powdered sugar and vanilla. With the whisk attachment on medium-high, whip until soft peaks form, about 3 to 5 minutes.
  2. Divide the package of mochi. Set aside one large handful of mochi for topping the trifle. Then divide the remaining mochi in half. Using one of these halves, spread them into the bottom of your trifle bowl.
  3. For the second layer, add sliced strawberries on top of the mochi.
  4. For the third layer, spread half of the whipped cream mixture on top of the sliced strawberries.
  5. For the fourth layer, set aside a handful of blueberries and spread the remaining blueberries on top of the whipped cream.
  6. For the fifth layer, spread the other half of the mochi on top of the blueberries.
  7. For the sixth layer, add the sliced strawberries. Size of trifle dishes vary so you can this layer as thick or as thin as you like. Keep in mind you will need enough room to add another layer of whipped cream and topping.
  8. For the seventh layer, add the remaining whipped cream, stopping about 1 inch below the rim of the trifle.
  9. For the topping, arrange any remaining strawberry slices and the handful of blueberries and mochi you set aside.
  10. Best served immediately or same day. The mochi will absorb the moisture from the whipped cream and berries and will get mushy after a few hours.
