This is almost like a vanilla cupcake, but I use all-purpose flour because these muffins do not need the soft cake-like texture cake flour gives to cupcakes. A tiny bit sturdier but still soft and moist. The malted powder really highlights all the vanilla flavors. Whoever said vanilla is boring never tried these muffins.

Creamy Vanilla Chip Malted Muffins: Soft, Moist & Dreamy

Unlike standard vanilla muffins, we’ve added a hint of malt powder to deepen the flavor and create a tender, velvety crumb. Sprinkled with sweet vanilla chips, these muffins are the ultimate comforting treat for a cozy morning or a weekend brunch.

Ingredients

  • 1 1/4 cups (150 grams) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon malted milk powder
  • 1/2 cup butter, softened
  • 3/4 cup (175 grams) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup (114 grams) sour cream, room temperature
  • 1 cup (approx. 5.25 ounces) vanilla chips, plus a handful to top the muffins before baking

Instructions

  1. Preheat oven to 350°F and line muffin pan with cupcake liners.
  2. In a medium bowl, whisk together four, baking powder, salt and malted milk powder.
  3. In the bowl of your stand mixer with whisk attachment, beat the butter and sugar on medium-high speed for 5 minutes until thick and fluffy. Scrape down the sides of the bowl with a silicone spatula if needed.
  4. Add the eggs and vanilla and beat on medium for 1 minute.
  5. Add the flour mixture and sour cream. Whisk on low until just combined and smooth, about 1 minute. Scrape down the bowl as needed. 
  6. Divide the batter evenly into a 12 count muffin tin, filling each about 2/3 full. 
  7. Bake for 20 to 23 minutes or until a cake tester inserted in the center comes out clean. Let the muffins cool in the muffin tin for 5 minutes before transferring to a wire rack to continue to cool.

Can I make mini muffins with this recipe? 

Definitely — reduce the baking time by about 5–7 minutes and keep a close eye on them. Mini muffins are perfect for parties, brunch platters, and snack boxes.

What if I don’t have malted milk powder?

You can skip it, and you’ll still have a delicious vanilla chip muffin. But if you want to replicate that subtle depth, a small amount of instant vanilla pudding powder makes a nice substitute.

Can I add mix-ins? 

For sure! Chopped macadamia nuts, a swirl of cream cheese, or a sprinkle of flaky sea salt on top all play beautifully with the vanilla malt base.
