Ingredients
- 1 1/4 cups (150 grams) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon malted milk powder
- 1/2 cup butter, softened
- 3/4 cup (175 grams) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1/2 cup (114 grams) sour cream, room temperature
- 1 cup (approx. 5.25 ounces) vanilla chips, plus a handful to top the muffins before baking
Instructions
- Preheat oven to 350°F and line muffin pan with cupcake liners.
- In a medium bowl, whisk together four, baking powder, salt and malted milk powder.
- In the bowl of your stand mixer with whisk attachment, beat the butter and sugar on medium-high speed for 5 minutes until thick and fluffy. Scrape down the sides of the bowl with a silicone spatula if needed.
- Add the eggs and vanilla and beat on medium for 1 minute.
- Add the flour mixture and sour cream. Whisk on low until just combined and smooth, about 1 minute. Scrape down the bowl as needed.
- Divide the batter evenly into a 12 count muffin tin, filling each about 2/3 full.
- Bake for 20 to 23 minutes or until a cake tester inserted in the center comes out clean. Let the muffins cool in the muffin tin for 5 minutes before transferring to a wire rack to continue to cool.
