Ingredients

Instructions

  1. In a medium saucepan, combine the washed blueberries, lemon zest and lemon juice. Cook on medium heat for 5 minutes.
  2. Use a masher or fork to mash up the blueberries. Depending on your preference, you can mash it up fine or leave chunks. Taste for sweetness and add 1 to 2 tablespoons of honey or maple syrup, to suite your preference.
  3. Simmer on low for another 5 minutes. Remove the pan from heat and add the chia seeds. Mix until combined. Pour the mixture into a glass jar.
  4. Let the jam cool for 30 minutes and then cover and refrigerate for at least 3 hours or overnight. Enjoy within two weeks.
