Ingredients

  • 1 cup warm water
  • 2 tablespoons sweetened condensed milk
  • 1/4 cup (65 grams) of mashed UBE (steamed or baked and then mashed)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chia seeds

Instructions

  1. In a small mixing bowl, combine warm water and sweetened condensed milk. Whisk until the milk completely dissolves.
  2. Whisk in the Ube and vanilla until mixture is smooth.
  3. Add the chia seeds and stir to combine well. Pour the mixture into two jars or bowls. Cover and refrigerate overnight.
  4. Enjoy on its own or topped with fruit, granola and/or nuts.

Most Asian markets will have ube, right next to the regular sweet potatoes. I get my ube from Stew Leonards in Paramus, NJ.
