I never met a chicken wing I didn’t like. Deep fried, baked, grilled or smoked, I’ll take it all. But what makes an okay wing recipe and extraordinary one? It’s all in the rub! I love this rub so much that I make a big jar of it and use it on other chicken, ribs, pork butt and briskets. These wings are marinated for 24 to 48 hours so the flavor is infused all the way to the bones. In this recipe, we will simply bake them. Ingredients

Units Scale
  • 4 to 5 pounds of party wings

Marinade

  • 1/2 cup vegetable oil
  • 1/2 cup of hot sauce (like Frank’s Red Hot)
  • 1/2 cup dry rub (recipe here)
  • 1/2 lemon, squeezed

Instructions

  • Combine all the marinade ingredients until mixed together well. Pour the marinade over the wings and use tongs or gloved hands (the acid and hot sauce might irritate sensitive skin) and mix the marinade into the wings until every wing is thoroughly coated.
  • Marinate in a lidded air-tight container or zip lock bag(s). Refrigerate for 24 to 48 hours.
  • Line a large baking sheet with foil and a wire rack. Arrange your wings close but not touching on the rack. Allow any excess marinade to drip off the wings while you pre-heat the oven to 325°F on convection bake.
  • Bake for 13 to 14 minutes. Take the baking sheet out of the oven and flip each wing over. Return to oven bake for another 13 to 14 minutes, watching closely during the last few minutes for browning. Cook until the wings are slightly brown and crispy at the edges.
  • Serving option: Celery, Carrots and Blue Cheese Dip
